Hot Cross Buns
Room for improvement, so I won’t share the recipe yet. These are my attempt at gluten free hot cross buns. I used a commercial GF flour mix and added some quinoa flour to it for quantity and nutrition. They tasted nice, but the crust was a bit tough. They did not rise very well although I used yeast. The crosses were made by sprinkling cocoa through a stencil cut from cardboard. I did try to glaze them with stevia/gelatine mix, but had to dodge the chocolate crosses or they just dripped off the bun.
